granola day

Is it any wonder that I love granola? As evidenced by the following photo, I was raised by hippies…full-on granola making, bread-baking, garden-growing hippies.

But when the 70’s turned into the 80’s, the homemade granola was replaced by muffins and croissants, and until very recently I had not had any inclination whatsoever to eat it, nevermind make it. But one breakfast parfait about 3 weeks ago changed all that. Since then it’s been a blur of oats, almonds and honey….and somehow, it’s even better than I remembered. Here’s today’s version:
Hippie Mix
6 cups rolled oats
1½ cups sliced almonds
1 1/3 cups raw pumpkin seeds
1 teaspoon salt
1½ cup oil
½ cup raw honey
¼ cup maple syrup
2 tablespoons raw sugar
1/3 cup light coconut milk
1 tablespoon coconut extract
1 1/2 cups dried cranberries




Combine all ingredients except dried cranberries and spread evenly on baking sheet. Bake at 275 for 1 hour to 1 hour, 15 minutes, mixing every 20 minutes or so to ensure even browning. Once golden, remove from oven and cool thoroughly. Add dried cranberries and store in airtight container.




Would the man in that photo use shredded coconut? Perhaps. Had he shimmied up the tree himself and concocted an improvised explosive to open it, thus shredding half of the garage in the process.
And yet…it looks delicious. Thank you.
